The kids and I were looking for a new flavor of cupcake that we hadn’t tried before and we came across this fabulous recipe.  This recipe is great for two reasons.  First cupcakes are always fun to make, especially if you’ve got kids and are looking for something fun to do together.  Second, if you’re like me, you loved Creamsicles as a kid and these cupcakes are the perfect way to recreate the taste of those, but they take it to the next level!  The orange and vanilla mixture of these cakes recreate the flavor of the Creamsicle ice cream so well that they didn’t last very long.  Give them a try for your next celebration.  I think your whole family and friends will love them!

Here’s what you need:

Cupcakes:
1-1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon coarse salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup sour cream, room temperature
Zest of 1 orange
Filling:
1/2 cup heavy cream
3 tablespoons granulated or powdered sugar
1/2 teaspoon vanilla extract
Frosting:
2 cups unsalted butter, room temperature
6 cups powdered sugar, sifted
1/2 teaspoon vanilla extract
Zest of 1 orange
