You can not look at that picture above and NOT feel hungry! How amazing does this chicken look! This is a recipe that I came across recently and the picture already looked so tasty, but then I saw that they used balsamic vinegar and I had to wonder if it would work. And boy, did it!

Chicken thighs make a great meal because they are a lot cheaper than chicken breast and I think they have a lot more flavor to them.  This recipe is so simple to make, it takes no time at all and very little effort and you will not believe how wonderful the chicken comes out with this delicious sauce.  I was so excited because everyone in my family asked for seconds, including myself.  I’m so glad I gave this recipe a chance, and I think you should too.

2 lbs skinless chicken thighs
salt and pepper, to taste
1⁄4 cup chopped shallot
1⁄4 cup balsamic vinegar
cooking spray
