This recipe, Goat Cheese, Caramelized onions and Prosciutto Flatbread Bites, can be made for a Saturday afternoon lunch for your husband and yourself. Saturday’s at your house is usually McDonald’s or pizza day…but not today…the kids are away at camp or at a friend’s house, and you feel a bit adventurous. Don’t worry about the kids, they wouldn’t like it anyway.

It’s great making this flatbread because you use items that your kids DEFINITELY DON’T WANT ON THEIR PIZZA.

Things like:

2 Tbl. olive oil, plus additonal for drizzing
1 large onion, sliced
1/4 tsp. salt
1/4 cup water
All-purpose flour, for dusting
1 package (about 14 oz.) refrigerated pizza dough
2 oz. goat cheese
4 slices prosciutto
1/2 tsp. fresh thyme

Now I don’t know about you, but if I was a kid and I heard the words “goat cheese” and/or “prosciutto,” I would pucker up like I had just sucked on a lemon at the mere thought of it. Try this version of pizza a few times, and somewhere down the road you might be able to introduce this flatbread to your kids. Who knows, they are bound to get curious at one point or another.

I would like to thank Annette’s Sweet Treats for bringing me this delicious flatbread pizza. This certainly isn’t your grandfather’s pizza, that’s for sure! Remember to click here to head over to Annette’s Sweet Treats now for the full instructions. Enjoy!
