“Cocktail Meatballs” that you can make in the oven, bake, drain off excess fat. Sounds good to me! Then make the sauce in a skillet. Stir in the wine and the rest of ingredients, cook stirring often. Add the meatballs, simmer and in 5 minutes they are done. 1 1/2 pounds ground chuck
1/4 cup seasoned breadcrumbs
2 teaspoons prepared horseradish
2 garlic cloves, crushed
3/4 cup tomato juice
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
2 medium-size yellow onions, chopped (about 1 1/2 cups), divided
Vegetable cooking spray
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups beef broth
1/2 cup dry red wine
2 tablespoons light brown sugar
2 tablespoons ketchup
1 tablespoon fresh lemon juice
3 gingersnaps, crumbled (about 3 Tbsp.)
