This one’s for all the diabetics out there, and I know there are a lot—including myself.  It’s hard being a diabetic when you’re the ONLY one in you family that has to watch everything that you put into your mouth.  I look forward to eating like everyone else, but unfortunately my portion of food will be quite smaller than the rest of the people at my table.  The American Diabetes Association has made this dish, Eggplant Parmesan, that is quite good, bot to mention good FOR you.  You have to make sure you use whole grains and DON’T deep fry what you’re eating. You can use zucchini noodles instead of pasta, which isn’t bad at all.

Here is what you’ll need to make Eggplant Parmesan:

1/2 cup flour
1/2 tsp dried basil
1/4 tsp ground black pepper
1 cup whole-wheat panko bread crumbs
1/4 cup freshly grated Parmesan cheese
3 egg whites, beaten
1 medium (1-lb) eggplant, sliced into 10 1/2-inch-thick rounds
1 Tbsp olive oil
Nonstick cooking spray
1 (24.5-oz) jar reduced-sodium pasta sauce
1/4 cup shredded part-skim mozzarella cheese
This sounds great! Not to mention, it sure is a lot more exciting than most meals I get to eat. Thanks to everyone at the American Diabetes Association, I can finally enjoy a good “normal” meal from time to time. Check out their website to find how hot to make it for yourself.
