Farfalle with Mushrooms and Spinach is a quick and easy recipe, and makes a wonderful side dish to chicken or steak. Any type of pasta can be used even though the recipe calls for farfalle. Why don’t you make it one night, and give it a shot? If you want, you could do what I did, and add some sliced sausage to the mix to really take this up a notch! 6 ounces dried farfalle (bow-tie pasta)
1 tablespoon olive oil
1 medium onion, chopped
1 cup sliced portobello or other fresh mushrooms
2 cloves garlic, minced
4 cups thinly sliced fresh spinach
1 teaspoon snipped fresh thyme
1/8 teaspoon pepper
2 tablespoons shredded Parmesan cheese
