Sally over at SallysBakingAddiction.com has shared a great way to cool off now that summer is finally in full swing.  These Frozen Mojito Slushies are both delicious and refreshing!!  They are made with rum, but if you’d like to make a virgin version for the kids, Sally suggests that you simply replace the rum with club soda, so everybody can cool off!!  In Sally’s own words:

Mojitos are cocktails made with light rum, lime, sugar or simple syrup, muddled mint, ice, and club soda. They’re dangerous little drinks because they go down so easy! A new-to-me way to enjoy them is blended, or frozen slushie style. Basically, you’ll take some of the same ingredients and throw it all into a blender. And it’s damn tasty!

Sounds good to me!  I’m going to give these a try at the barbeque I’m hosting next weekend!!

Here’s what you’ll need to make Frozen Mojito Slushies:

1/3 cup (80ml) fresh lime juice (about 4 limes)
zest of 2 limes
1/4 cup (60ml) agave nectar (or simple syrup)1
1/4 cup fresh mint leaves, firmly packed
1/2 cup (120ml) light rum2
5 cups crushed ice
garnish: mint leaves, lime slices, fancy umbrellas
