Ok… I love bread…no this isn’t Oprah lol…but I have to have some kind of bread everyday and my first choice is to make some of my favorite sandwiches.  Egg salad is on top of my list because it’s just so easy to boil a dozen eggs ahead of time and keep them in the fridge to use later. Plus it’s just super tasty!

I was trying to find a few different sandwich ideas that I haven’t tried before and I found this one.  I eat egg salad sandwiches all the time, but I have never, ever put bacon on one…and I love BACON.  I couldn’t believe I never tried this. It’s always the simplest things, right in front of your face all the time that you NEVER think of, am I right? But I’m glad I learned the error of my ways though, because this just became my new favorite!

Look at the picture and tell me you don’t want one right now!  The crispier the bacon the better the taste.  It’s such an easy recipe, but so amazingly good.  Your kids will love these.  Your whole family will ask for them again and again!

Here’s what you need:

8 large eggs
5 strips Smithfield Hometown Original Bacon
1/4 cup mayonnaise
2 Tbsp. chopped green onions
1/4 tsp. salt
1/8 tsp. black pepper
