Glazed Lemon-Coconut Bars– I love this combination, it all goes so well together. It’s made with Bisquick Heart Smart mix and fat-free eggs, so you’re off to a good start. You mix the first ingredients (Bisquick and powdered sugar), then follow directions, mix ingredients till crumbly…press into 8 inch square pan. Then pour the coconut mixture over baked layer…then bake…pour glaze over mixture…cool…cut. This recipe is simple and would go well you’re looking for a nice after-dinner treat.  I would like to thank Judy Lyon Forrest for the delicious recipe.

Here is what you’ll need to make Glazed Lemon Coconut Bars:

1 cup Bisquick Heart Smart mix
2 Tbsp. powdered sugar
2 Tbsp. firm butter
¾ cup granulated sugar
¼ cup flaked coconut
1 Tbsp. Bisquick Heart Smart mix
2 tsp. grated lemon peel
2 Tbsp. lemon juice
½ cup fat-free egg product

Lemon Glaze:
½ cup powdered sugar
1 Tbsp. lemon juice
