Here is another cookie that you can make for Christmas! It’s called Peppermint Butter Cookies. It uses crushed candy canes, which will be very easy to find this time of year. There are candy canes that come in all flavors; Cherry, Jelly Belly, Root Beer…and that was just a few flavors…there are so many more to choose from, and you can use ANY of them for this recipe. But I’m a real sucker (no pun intended) for the classics, so just a standard candy cane will do.

You make the batter for the cookie, but add peppermint extract and sour cream.  Then refrigerate them…the next day; roll them out and with flour…a cookie cutter…and bake.

Once you make the frosting; you add more peppermint extract…frost them…then dip them in crushed candy canes. Couldn’t be simpler! These are great to make come crunch time, ass the big day gets closer and closer.

Here’s what you need:

For the cookies:
6 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup (2 sticks) butter, at room temperature
2 cups sugar
3 eggs
2 teaspoons peppermint extract
1½ cups sour cream
For the frosting:
1 cup (2 sticks) butter, at room temperature
1 teaspoon peppermint extract
4 cups powdered sugar
Pinch of salt
6 tablespoons heavy cream
Crushed candy canes, for decoration
