Here’s the perfect soup for the warm months ahead for people who love Fresh Strawberries. Its strawberry-lemon thyme soup, and the great thing about it (other than how healthy it is) is that YOU DON’T HAVE TO COOK IT! You put this so-called soup in the blender, then chill for 4 to 24 hours, this way it has time to blend the flavors. When you’re finished chilling the soup (follow directions), then you swirl the remaining buttermilk into each serving and garnish with lemon peel and fresh thyme. Here is what you’ll need to make Strawberry Lemon Thyme Soup:

3 cups sliced fresh strawberries

1 cup low-fat buttermilk

2 tsp. finely shredded lemon peel

1 tsp. snipped fresh lemon thyme or thyme

2 Tbsp. honey

2 Tbsp. low-fat buttermilk

Lemon peel strips and/or fresh thyme springs (optional)
