Fall is finally here and the weather is cooling down, so it’s the season to start craving comfort foods.

One of my favorite comfort foods is a big, hearty, bowl of homemade soup.  I’ve always been a big fan of stuffed peppers too, so when I found this recipe for stuffed pepper soup I was so excited!

Just looking at the picture made me hungry, so I headed right out to buy what I needed.  Between the ground beef, peppers, tomatoes, onions, rice and other ingredients this is a soup that is hearty enough to make a meal in itself.  I usually make a nice homemade loaf of bread when I make soup, and this is no exception! Dinner is served!

Here’s what you need:

1 lb lean ground beef
2 Tbsp olive oil, divided
Salt and freshly ground black pepper
1 small yellow onion chopped (1 cup)
3/4 cup chopped red bell pepper (a little over 1/2 of a medium)
3/4 cup chopped green bell pepper
2 cloves garlic, minced
2 (14.5 oz) cans petite diced tomatoes
1 (15 oz) can tomato sauce
1 (14.5) can beef broth
2 1/2 Tbsp chopped fresh parsley, plus more for garnish
1/2 tsp dried basil
1/4 tsp dried oregano
1 cup uncooked long grain white or brown rice (I’ve tried and like both)
Cheddar or mozzarella cheese, for serving (optional)
