Soon it will be time to BBQ outside, and what does EVERY BBQ need? Salads! Well, I have found this Summer Fig and Watermelon Salad with Feta for you to try at your next cookout. It’s NOT your typical salad. It has cubed watermelon, stemmed figs and crumbled feta cheese and other ingredients (you can also add some sunflower seeds or walnuts). Here is what you’ll need to make Summer Fig and Watermelon Salad with Feta:

2 cups cubed seedless watermelon
1/2 cup thinly vertically sliced red onion
2 large fresh Calimyrna or other green-skinned figs, stemmed
2 large fresh Brown Turkey, Black Mission, or Striped Tiger figs, stemmed
1 ounce crumbled feta cheese (about 1/4 cup)
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon honey
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh basil
2 tablespoons balsamic glaze
1/4 teaspoon coarse sea salt
1/4 teaspoon freshly ground black pepper
