Roasted Ratatouille is another recipe from The Sugar Solution Cookbook. This recipe has nothing in it but vegetables and spices. It’s a great side dish!! The eggplant, zucchini, bell pepper just goes SO well together. This was one of many recipes from that book that was so good, I found myself making it time and time again! This dish would be great alongside with Apricot-Stuffed Pork Loin or even just a burger… WHATEVER! The choice is up to you!! Here’s what you’ll need to make Roasted Ratatouille:

1 eggplant (about 1 pound), trimmed, peeled, and cut into 1/2 inch pieces
1 medium zucchini (about 8 ounces)
1 medium onion, chopped
1 red bell pepper, seeded and cut into 1/2 inch pieces
1/2 medium fennel bulb, cored and thinly sliced
1 tablespoon olive oil
1 teaspoon chopped fresh thyme
1/2 teaspoon chopped fresh rosemary
1 can (15 1/2 ounces) diced tomatoes
2 teaspoons minced garlic
1 1/2 teaspoons chopped fresh oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon grated Parmesan cheese
