One of the fondest memories I have of my mother, is her making “Shrimp Creole” for any special occasion that was going on in my house.  I couldn’t find the exact recipe, but this recipe from Pillsbury is pretty darn close!  I remember helping my mother with slicing the onions and chopping the celery like it was yesterday.  Well, back to today, I know Pillsbury will do it justice!

Here is what you’ll need to make Shrimp Creole:

2 lb uncooked medium shrimp in shells, thawed if frozen

1/4 cup butter or margarine

3 medium onions, chopped (1 1/2 cups)

2 medium green bell peppers, finely chopped (2 cups)

2 medium stalks celery, finely chopped (1 cup)

2 cloves garlic, finely chopped

1 cup water

2 teaspoons chopped fresh parsley

1 1/2 teaspoons salt

1/4 teaspoon ground red pepper (cayenne)

2 dried bay leaves

1 can (15 oz) tomato sauce

6 cups hot cooked rice
