Are you ready to change breakfast as you know it? A local pizzeria makes an amazing breakfast pizza (with scrambled eggs instead of sauce topped with cheese, bacon and/or sausage) that I always though was ingenious, but now, I think it’s met it’s match with THIS– Introducing the PANCAKE LASAGNA! It’s everything you want in a hardy breakfast in one tiny square portion, and it is every bit as AWESOME as you think it is!

Lasagna is a great dish, pancakes are another great choice, so pancake lasagna is a dish I had to try.  This lasagna is layers of pancakes, maple bechamel, sausage, bacon, cheese and eggs.  The recipe uses 25 eggs so it makes quite a big dish, so you may want to cut down the portions.

You can of course use any pancake mix if you don’t want to make your own. The bechamel, which is a white sauce, is really delicious and makes this dish outstanding.  It is a sweet dish and like I said if you follow this recipe you’ll have a lot of lasagna, but it’s very easy to make your own.  Add a little more of this and  a little less of that.  Match it to your taste.  Your family will love it!

Here’s what you need:

Batter:
3 cups buttermilk
1/2 cup milk
1/3 cup butter, melted, plus more for skillet
3 eggs
3 cups all-purpose flour
4 tablespoons white granulated sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
Bacon and Sausage:
30 strips apple-smoked bacon
30 links good breakfast sausage
1/2 bunch fresh sage, chopped
Eggs:
25 eggs
Butter, for the skillet
About 1/2 cup heavy cream
Maple Bechamel:
1/2 cup butter
1/2 cup all-purpose flour
1/2 gallon heavy cream
4 cups maple syrup
Butter, for greasing
2 pounds shredded Cheddar
1 cup maple syrup
