One of my son’s favorite recipes of mine is the simple Brownie Cookie. For those who have never had one, it’s basically just a chocolate cookie in appearance. But the thing about it is that it has an almost bitter/semi-sweet taste and texture of an average brownie. I think this would totally qualify as a “best of both worlds” kind of dessert. He’s not the only one either. Whenever I send some of these off with my husband when he goes to work, not only do they just disappear, but I get requests for MORE! The best part about this recipe tho, is that it’s NATURALLY flourless, so even if you are avoiding gluten, you can still indulge in the decadence of this fantastic cookie! 3 cups powdered sugar
3/4 cups dutch process cocoa powder
1 teaspoon kosher salt
2 large egg whites
1 large egg
