This is a recipe for beef and roasted red pepper sandwiches that just looked so good in the picture, I had to make them. A sandwich with roast beef, red bell peppers, and cheese is always amazing and this sandwich is no exception. This isn’t exactly a “new” sandwich, it’s nothing really crazy or “out there,” it’s just a nice simple pleasure. Plus, roasted red peppers aren’t exactly a household item for me, even though I’ve always loved them. Now I have an excuse to go out and buy them more often!

It’s so simple, but can be made so elegantly that you could make these for lunch or use them cut up for a party or get together. Serve these sandwiches with a nice salad and you’ve got yourself a great meal!

1 (1 ounce) packet dry au jus mix
1 pound thinly sliced roast beef
garlic powder to taste
salt and pepper to taste
1 (12 ounce) jar roasted red bell peppers, drained and sliced
8 ounces sliced extra sharp provolone cheese
4 torpedo rolls, split
