Me and the kids are big on popcorn chicken and we try to have it at least once a week at whatever take out place we stop at. Who doesn’t love bite-sized food you can eat with your hands? This week I decided to try and find a recipe for popcorn chicken that the kids and I could make together.

This is one that we tried and it is really quite amazing! This recipe is for popcorn chicken with a spicy chili glaze sauce that is just wonderful.  Making your own chicken, I think, is so much better than anything I’ve bought out at restaurants.  The sauce is a great blend of sweet chili sauce, Sriracha, ketchup, soy sauce, and rice vinegar that tastes so good and turns regular chicken into a great tasting meal that you will have a hard time stop eating.  Give it a try!

Here’s what you need:

Popcorn Chicken
Neutral oil (like canola oil) as needed for frying
4 boneless, skinless chicken breasts, cut into 1-inch cubes
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
¼ teaspoon cayenne pepper
Spicy Glaze
½ cup sweet chili sauce
¼ cup ketchup
1 tablespoon Sriracha
1 tablespoon soy sauce
2 tablespoons rice vinegar
