My whole family loves to bake!! My sister makes these Snowball cookies every year…that are to die for… they are little balls that have chopped almonds in them and when they are done baking she rolls them in powdered sugar. They are so good that they are always the first cookie to go…that’s how good they are!

I was looking for a totally different cookie recipe online, and I came across this on Lemon Snowball Cookies that are similar to my sister’s cookies, but these have cornstarch, powdered sugar, lemon zest, lemon extract and finely chopped almonds.

So I thought I would give them a try, and boy oh boy, do they taste good! I think I will make these cookies for my house at Christmas or maybe give them as a gifts to people I know. One thing’s for sure, I’m gonna bring them over to my sister’s house this year and have a family taste test. I’m pretty sure I’ll win!

Here’s what you need:

2 cups (282g) all-purpose flour
3 Tbsp (24g) cornstarch
1/4 tsp salt
1 cup (8 oz) butter, softened
2/3 cup (84g) powdered sugar
Zest of 2 lemons (about 4 tsp)
2 tsp lemon extract
1/2 tsp vanilla extract
1/2 cup (68g) finely chopped almonds
1 1/2 cups (180g) powdered sugar
