Are you trying to cut down on the amount of meat you eat per week? Do you like red peppers? Well, have I got the meal for you! Vegetarian Stuffed Peppers! I love eating stuffed peppers, usually with some sort of meat in the filling…but if you want to keep it vegetarian…try this recipe.

Here’s what you need:

6 medium red bell peppers
1 teaspoon olive oil
3/4 cup finely chopped shallots
4 cups chopped mushrooms
1 cup chopped fresh parsley
1/4 cup slivered almonds, toasted
3 tablespoons dry sherry
1 1/2 teaspoons ancho chile powder
2 1/2 cups hot cooked brown rice
1 cup tomato juice
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 cup (1 ounce) grated fresh Parmesan cheese

Cut the top of pepper off, then boil for 5 minutes; cool. In a large skillet cook the shallots and peppers till tender. Add the rest of ingredients; sauté. Add the rice and the next 3 ingredients; mix together with mushroom mixture; fill…put cheese on top. Bake the peppers…15 minutes later you’re ready to eat this fantastic meal!
