You are going to need a waffle iron for this recipe, but we’re not talking waffles, we’re talking cookies!  I found this recipe during one of my digs and I thought it was so clever.  I love anything where I don’t have to turn the oven on.  It’s also nice to use my waffle maker for something other than waffles. I’ve got a real soft spot for creative recipes like this!

The ingredients are pretty basic, in fact most of them are probably already in your kitchen.  You do need some almond meal, which is basically almonds that are pulsed in a coffee grinder to a medium fine texture.  The dough has to chill for a while so this recipe is not a quick fix, but these cookies are really quite delightful.  Give them a try and let me know what you think.

Here’s what you need:

1 large egg yolk
10 tablespoons unsalted butter, softened
1/3 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup almond meal
About 1 cup chocolate ganache, lemon curd, jam, or dulce de leche (amount will vary according to shape of cookies), for filling
