Here’s a great pasta dish you can enjoy anytime of the year, no matter what its name is, it’s Autumn Pumpkin Pasta!

It is made with Green Lentil Penne or you can use regular penne, Pumpkin Puree, Plain Tomato Sauce, and six (6) other ingredients. But if you want this dish to be gluten-free, nut free and vegan…I would look for the Green Lentil Penne. Again though, it’s all up to you.

Of all the various pumpkin-based recipes out there, I honestly don’t think I’ve ever tried it with pasta. At least, not like this. This pasta dish is so tasty and so easy to make that you would want to make it over and over again.

Here’s what you need:

  • 1 8oz Box Green Lentil Penne
  • 1 15oz Can Pure Pumpkin Puree
  • 1 Cup Plain Tomato Sauce
  • ½ Cup Sliced Black Olives (rinsed)
  • ¼ Cup Nutritional Yeast
  • ¼ Cup Chopped Parsley
  • 1 TB Chopped Chives
  • 1 TB Chopped Sage
  • 1 Tsp Minced Garlic
