The World’s Best Cookie has coconut in it…and that right there has my vote. I love coconut whether it in a chicken dish…the state of Hawaii…or in a cookie…it’s the BEST. ‘Nuff said, really!

This cookie also has rolled oats, cornflakes and pecan… Wait, did I just write CORNFLAKES?! That’s something I wasn’t expecting, THAT’S for sure! And that right there put the icing on top of the cake—err, COOKIE! I can’t wait until they’re done, because I will probably eat 6 before I put them on the cooling rack! But that’s fine, because this recipe makes A LOT of cookies all at once, so odds are, nobody will miss just a few… or 10…

Here’s what you need to make this spectacular cookie all on your own:

1 cup butter
1 cup white sugar
1 cup packed brown sugar
1 egg
1 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
3 1/2 cups all-purpose flour
1 cup rolled oats
1/2 cup flaked coconut
1 cup crushed cornflakes cereal
1/2 cup chopped pecans
