I still had some strawberries left over from our last pick so when I saw this recipe for fresh strawberry cake, it was perfect. Who doesn’t love fresh strawberries? I wanted a light dessert for this weekend so I gave this cake a try and it turned out so well! You only need about 1 and half cups of strawberries, 1 cup for the cake and the rest for the strawberry cream cheese frosting. The rest of the ingredients are basic that you probably already have them in your pantry.

The cake will bake for about a half an hour and the combination of the lightness of the cake and the sweetness of the cream cheese frosting makes a cake that will please everyone.

1 cup mashed strawberries
2 1/2 cups all-purpose flour, stir before measuring
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup butter, softened
1 1/3 cups sugar
2 large eggs
1 teaspoon vanilla extract
Strawberry Cream Cheese Frosting
3 ounces cream cheese, softened
1 tablespoon butter, softened
pinch salt
3 to 4 cups confectioners’ sugar
1/2 cup mashed strawberries, excess juice drained
