I recently had dinner at a friends house and she served this wonderful dish of fried bananas that used coconut milk and real shredded coconut as a topping.  We were able to choose either a coconut or vanilla ice cream to go with it and it was so good.  It was a very light and refreshing dessert that settled my stomach after a spicy dinner.  She showed me this recipe that she had used and now it is part of my recipe collection. Here’s what you need:

2 tbsp palm sugar or soft light brown sugar
2 bananas, peeled, halved length ways, then each chunk halved again
150ml coconut milk
coconut
Coconut ice cream and toasted, shredded coconut, to serve
