This is a recipe I got from Rachael Ray, and my main reasons for using it was the ease of the recipe and the delight of such a great tasting meal. It’s a recipe that makes a delicious meal of chicken that is stuffed with mashed potatoes.  So simple and yet so good!

It’s such a great recipe that you will end up using it quite a bit.  I usually cook up some corn on the cob, make a spinach salad and I end up with a wonderful, warm, and tasty meal my whole family loves. I also like to add mushrooms to the mix and make into kind of like a poor man’s chicken marsala. That explains why the picture above is so different from the version on Rachael Ray’s page. Here’s what you need:

2 baking potatoes (about 8 ounces each), peeled and cut into 1-inch chunks
1/4 cup milk
4 tablespoons butter
Grated peel and juice of 1 lemon
Salt and pepper
4 bone-in chicken breast halves (about 3-1/2 pounds total)
1 tablespoon extra-virgin olive oil
2 tablespoons chopped flat-leaf parsley
