It summer time…it’s hot & sticky…you have plenty of time to bake, but ITS TOO HOT TO DO SO. You want to make a pie for your dinner guests…so what should you do? I know I’ll try making this No-Bake Strawberry Chocolate Pie.  You run to the store to get all the ingredients, and your pie making begins. You make your Oreo crust and put it in the fridge; and 30 minutes later you start the pie.

Roxana’s tips are what follow: place a thin layer of melted chocolate and heavy cream (stir it up) on bottom so your strawberries will stand up and won’t dance around. Next, place chopped baking chocolate and butter and melt; then add the cream cheese and continue to stir until smooth and soft. Then you remove bowl from heat AND QUICKLY STIR in the lemon juice; then quickly add the powdered sugar. At this point let the FILLING COOL in the fridge. After 30 minutes, fold in the whipped cream. You’re ready to spread filling over the strawberries; grated chocolate goes on top of pie; the final touch will be the swirls on whipped cream and strawberries.

Here is what you’ll need to make No-Bake Strawberry Chocolate Pie:

Crust
25 Oreo cookies
1/3 cup butter, diced

Ganache
4 oz baking chocolate, roughly chopped (semi-sweet or unsweetened, whatever you prefer)
1/3 cup heavy cream
1 1/2 cups to 2 cups fresh strawberries, hulled

Filling
1 tablespoon butter
3 oz unsweetened baking chocolate, roughly chopped
8 oz cream cheese, diced
2 tablespoons freshly squeezed lemon juice
1/2 cup Imperial Sugar powder sugar
1 cup heavy cream
1/2 oz grated chocolate

This looks positively scrumptious! Rich chocolate and fresh strawberries make for a phenomenal combination!
