I recently started eating salmon, and LOVED it. I had never really been much of a fan of it, but who knows, maybe tastes just change. I don’t know if it was due to the marinade or not, but you didn’t have to twist my arm to eat it.  So what would you say if I told you to try it in a burger? Sounds weird, but it works quite well, let me tell you! I LOVED it…so I guess I’m on my way to eating HEALTHY.

Here is what you’ll need to make these awesome Salmon Burgers:

12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
1⁄2 medium onion, chopped
1⁄2 cup breadcrumbs, seasoned or 1⁄2 cup breadcrumbs, plain
1⁄4 cup chopped parsley (optional)
2 eggs, beaten
2 tablespoons unsalted butter
3 tablespoons olive oil
salt
pepper
