Zucchini is one of those vegetables that are so versatile, it’s amazing how many recipes I have found that have zucchini as one of the main ingredients.  To find a dessert recipe for zucchini was intriguing for me, I just had to give it a try. I mean, as much as I like it, zucchini is the LAST thing I would ever associate with a dessert.

I wasn’t sure how this dessert was going to turn out, it does take a little effort to peel and cube the zucchini, but it is so worth it and surprisingly delicious.  It’s a lot sweeter than I thought it would be and has such great flavor.  I think if you give it a try, you will be delighted and will end up making these zucchini dessert squares again and again. There’s noting better than that moment where someone tries this for the first time and they say “oh wow! this is so good! What IS THIS?” The look on their face alone will be worth it, believe me!

Here’s what you need:

    4 cups all-purpose flour
2 cups sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1-1/2 cups cold butter
FILLING:
8 to 10 cups cubed seeded peeled zucchini (4 to 5 pounds)
2/3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
